Do your teenagers enjoy baking as much as mine do? It’s one of the unexpected upsides of life with teens — our cookie jar is rarely empty. I love that they take it seriously too. There are bake-off competitions with their friends, recipe tweaks and debates over the best banana bread or chocolate chip cookie recipe. (They even create pretty recipe cards — see the image below!)
When Quin and Ivy perfected their chewy chocolate chunk cookie, we all thought that cookie couldn’t be topped. It was the ultimate — perfectly chewy in texture with dark chunks of chocolate and flakey sea salt on top. So yum.
But then, a few months ago, Quin brought the cookie jar to the table after dinner with a new creation he’d been working on — a chocolate chunk brownie cookie that is half cookie/half brownie. It has chunks of dark chocolate, chunks of white chocolate and salted macadamias. And ever since, there’s been a (very serious) family debate over which cookie reigns supreme. (I think my favourite is still the original chewy chocolate chunk cookies, but Michael prefers this one.)

Here’s the recipe…
Ingredients:
200g dark chocolate
110g unsalted butter
24g Dutch process cocoa
2 large eggs
150g caster sugar
110g brown sugar
110g all-purpose flour
1/2 tsp salt
1 1/2 cup chopped macadamias (salted)
1 1/2 cup white chocolate chips
1 1/2 cup dark chocolate chips
flakey sea salt for the top (optional)
Method:
Preheat your oven to 180 degrees Celsius.
In a double boiler, melt together the dark chocolate and the butter. Once fully melted, sift in the cocoa powder and combine. Leave to rest.
In a separate bowl, combine your eggs and sugar until pale and smooth. Pour in the melted chocolate mixture and whisk until well combined. Add the flour and salt and mix well. Fold in the chocolate chips and macadamias. Scoop into balls and place evenly on a tray. Bake for 10 minutes. Top with flakey sea salt and enjoy!
