Mexican food is very popular in our house. It is getting popular in Australia too, but is nowhere near as ubiquitous as it is in the US. Growing up, enchiladas were a favourite dish, but we never thought to make them for our kids until the pandemic. More time at home meant more adventures in the kitchen.
